Hey All!

Just thought I would share with you what I’m having for lunch today!  Or you can have it for breakfast and dinner also…because it’s just food.  Now, I realize since I work from home that this is a little easier to put together but, there is no reason you can’t make this into a lunch “on the go.”  And, it’s HOT as H*** right now across this great nation so this makes a wonderful cool meal since I didn’t even have to turn on an appliance to make it!

First, you see that delicious summer sausage?  I picked that up last week from Farmer Ralph at West Wind Farms.  They have all kinds of good stuff at their booth at the Franklin Farmer’s Market and if you don’t live close by I’m sure they’d be happy to ship to you.  West Wind Farms is a certified organic farm and they don’t add any “funky” stuff to their processed meats like nitrates and MSG.  But, for you folks on SCD/GAPS there is a teeny bit of sugar in their summer sausage.

As you can see on my lunch plate I’ve got all my bases covered with a nice amount of protein…just so you know, on top of the boiled egg I smeared a little sun-dried tomato pesto.  I have some delcious Sun Ja’s Kimchi (Korean fermented veggie) that I picked up at the grocery.  The fermented veggie helps me break down and digest the protein in my meal.  Then I’ve got some good fat going on in the olive-cured olives (not vinegar preserved).  You can find the olive-cured olives on most olive bars…such intense olive flavor.  How many times can I say olive?  And for my salad I’ve poured on some of my homemade Ranch Dressing.

So make it easy on yourself and have a nice cool meal during these incredibly hot days of summer…just make it balanced.  Remember, good food should equate to your satisfaction, health and well-being!
