Since I’ve had to give up all grains for awhile to heal my gut lining I’ve been on the lookout for a delicious muffin recipe that my sweet husband, Alex and I can enjoy together at breakfast or whenever.  Eureka, I found it!

It’s called “Pumpkin Muffins” and you can find it at www.scdrecipe.com I’m not much of a baker so I was looking for a little inspiration the other day for a tasty almond flour muffin.  I stumbled across this great recipe site for folks like me who are focused on eating the Specific Carbohydrate Diet.  Meaning there are specific carbs like all grains, sugars, some veggies and fruits that I should not be eating while I’m trying to heal the lining of my gut.  Those aforementioned foods are way too hard to digest and so they set up house in my small intestine feeding and proliferating the “bad bacteria” producing lots of toxins which do not make my body happy.  It’s just the way it is for now.  But, I have to say, I feel a whole lot better when I stick to the Specific Carbohydrate Diet and there are worse things in life than not being able to consume grains and sugars…so you deal.

O.K., back to the this great muffin recipe.  Before I bought the almond flour (which is blanched, skinless, ground to a fine powder almonds) I was just using my soaked and dehydrated almonds with the skins on that I “ground” in my food processor to the point of just getting ready to turn into almond butter.  I love the muffins used with my home-ground almonds so feel free to go that route if you don’t want to order almond flour.  But, I finally ordered some “real” almond flour to bake with it since I need to know what that’s like because of all the folks I talk to about eating the right foods to heal their guts.  See the sacrifices I make for y’all. :-)  By the way, this time I ordered the almond flour from www.digestivewellness.com and they all kinds of other items that support folks in this gut-healing journey.

If you or your child has a very inflamed and compromised gut I would just go with the almond flour all the time.  If you are pretty far down the road of healing your gut and you’re feeling pretty strong then I would try grinding your own almond flour at home with the skins on the almonds.  Either way they are delicious.

Have some fat with your fat!  I remember back in the day when I was afraid to even eat a few almonds becuase nuts are so full of fat.  I just cringe everytime I think about the lies we were all fed about eating any fats…a crying shame but, we must move on!  So, be sure to have a nice chunk of butter on your muffin and as you see in my picture a little homemade jam of some sort…mine is strawberry.  So very satisfying.

We are obviously not in pumpkin season or any other winter squash season right now so I buy frozen cubed butternut squash.  Give the squash a quick steam and mash it…works perfectly.  This squash really helps the muffins stay moist.  I also love all the spices in this recipe so be sure to try all those at least once.
